Waldorf Salad

A Waldorf salad is a salad traditionally made of fresh apples and walnuts, dressed in mayonnaise. Few people also add boiled potatoes, celery etc. And finally, even though it is a salad, it has many calories. So not recommended for people on diet.

I read about Waldorf Salad on wikipedia and made few modifications to the recipe. So the main source of this recipe is Wikipedia.














Ingredients :
1 large fresh apple
1/2 cup walnuts
3 tbspns Mayonnaise
1 tbspn fresh cream
1 tspn lemon juice
1 tspn sugar
A pinch of salt

For Garnishing :
Mint leaves

Preparation :
Cut apple into small squares
Take the apple pieces in a bowl
Add lemon juice, salt and sugar to it
Set it aside for 15-20 minutes
Then add walnuts and mayonnaise
Garnish it with mint leaves
Refrigerate it
Serve cold

Notes :
You may add celery leaves,  mint leaves in the salad itself
Lemon juice may be substituted by Vinegar

Pad Thai in Thai Green Curry



Pad Thai is one of the Thailand's national dishes. It is a dish of stir-fried rice noodles with soy sauce, tamarind juice etc. Also bean sprouts, tofu etc are added along with Thai Seasoning. 


In this dish, I have added Thai Green Curry paste along with the vegetables used to make Thai Green Curry.  Something different, but tastes awesome.. 


Ingredients :
For Main dish
1 Packet Flat rice noodles ( Phad Thai Noodles) Approx 200 gms.or 2 large cups
2-3 tbspns Thai Green curry paste
2 cups blanched vegetables (Broccoli, Sweet Corn, French Beans, Carrot, Capsicum etc.)
3-4 diced mushrooms
1 tbspn Thai Seasoning Mix (Thai mix herbs)
3 tbspns coconut milk powder
2 tbspns olive oil or vegetable oil
Salt to taste


For Garnishing :
Roasted and peeled peanuts
Chopped Spring onions


Preparation :
Heat 4-5 cups of water in a pan
Soak the rice noodles in hot water for 30 minutes
Heat oil in a pan
Add the blanched vegetables and mushroom
Saute the vegetables for 3-4 minutes
Then add Thai green curry paste
Mix the curry paste in vegetables
Then add Thai seasoning powder and coconut milk powder
Add salt to taste
Add 1 -2 tbspns of water to adjust the consistency
Finally add soaked rice noodles to the curry
Stir for few seconds
Transfer it in serving bowl
Garnish it with roasted peanuts and chopped spring onion


Notes :
1. Thai Seasoning is kind of mix dried herbs available readily in market.
2. To make Thai Green Curry paste at home use


Ingredients :
1 chopped onion
8-10 green chilles,
4 garlic cloves
1 tbsp ginger (grated)
2 lemongrass stalks
2 tbspn chopped coriander
2 tbspns chopped mint leaves
2 tspn fresh lime juice
1 tsp salt

Preparation :
Transfer all the ingredients in blender
Add small quantity of water (or coconut milk) to facilitate blending
Grind it to paste

Corn Upma

Adding sweet corn and milk  gives a delicious flavour to our regular upma.. Will be loved by kids also.


Ingredients :
1 cup boiled sweet corn
1 cup semolina
1/2 cup chopped onion
3 tbspns oil
1/2 tspn cumin seeds (Jeera)
1/2 tspn mustard seeds
1/4 tspn asafoetida (Hing)
5-6 curry leaves
2 green chillies
1 cup water
1 cup boiled milk
3-4 tspns Sugar
Salt to taste

For Garnishing :
Chopped corriander
OR Sev and corriander
OR Combination of grated coconut and chopped corriander
OR Grated processed cheese

Preparation :
Roast semolina in a pan on medium heat till it changes colour
Simultaneously mix milk and water and keep it for heating

To make Upma :
Take oil in a pan
Add cumin seeds, mustard seeds, hing, curry leaves and green chillies
Saute it for few seconds
Add onion to the tempering
Cook onion till it turns pink and transparent
Then add boiled corn to it.
At this stage add sugar and salt to the mixture
Then add semolina and saute it for few minutes
Add milk and water to the mixture
Cover the pan with a lid for 5-8 minutes
Check if the semolina is cooked
Transfer it in serving bowl
Garnish with chopped corriander

Notes :
Approx 3 corn cobs will yield 1 and 1/2 medium sized katoris
You may add 1 tspn of ghee when the upma is ready to serve. This gives nice aroma to it.
